What I like about this recipe is the ease with which it is prepared. It only takes a few minutes to prepare the composition and a few more to bake the wonderful strawberry muffins. In about 30 minutes I'm ready. You can prepare them even with the little ones. They will be very happy to make their own dessert. I advise you to choose strawberries that are as ripe and as fragrant as possible. The more fragrant the strawberries, the tastier the muffins will be. It would be preferable to use Romanian strawberries, which are much sweeter.
As I told you, the recipe for strawberry muffins is very simple. We just have to mix all the ingredients. It is important to have them all at room temperature. For better taste, you can replace the oil with the same amount of melted butter. Add the strawberries only at the end so that they don't crumble too much. To flavor them you can use vanilla, lemon or orange. When ready, the muffins should cool for at least 10 minutes. Then enjoy a serving of strawberry muffins. You will be delighted by their taste and I am convinced that you will prepare them very often.
Diploma cake with strawberries
For my daughter's birthday this year, I chose to make a diplomatic cake. And since strawberries are the stars of this season, I didn't fail to choose them as the only fruits I added to the diplomat cream.
Of course, all summer long you can prepare this refreshing cake, light and good, with any fruit you like, avoiding kiwi and fresh pineapple, which influences the action of gelatin.
Although I kept preparing various variants of the diplomat cream, this time I chose to prepare according to Violeta's recipe.
What made me happy was the fact that all the children asked for it, so it's worth sharing the recipe
For the countertop
2 tablespoons edible starch tip (not ammonia !!)
a teaspoon tip baking powder
For the cream
400 ml sweetened liquid cream
200 ml sour cream for cooking
a teaspoon of vanilla extract
300 ml sweetened liquid cream
In addition & # 8211 juice from a pineapple compote.
Wheat Cake diploma
Separate the egg whites from the yolks
Mix the yolks with water and oil and mix with a whisk, stirring vigorously.
Mix the egg whites with a pinch of salt.
Gradually add the sugar and do not stop until the sugar crystals are completely diluted. (approx. 10 minutes).
Put the yolks over the egg whites, sifted flour together with the starch and baking powder and mix well, stirring gently, from the bottom up, trying to get the air out of the egg whites as little as possible.
Pour the composition into a tall, square cake form (you can also bake in a round tray) with a side of 20 cm greased with oil and sprinkled with flour on the bottom. Move easily to settle as the composition.
Put the bowl in the preheated oven and bake the top on low to medium heat, on step 2 of the electric cutter, for 30-35 minutes (do the toothpick test)
Leave to cool. After a few hours, slice into two equal slices.
Start with the strawberries, which you wash and peel and cut into cubes.
Put them in a strainer, sprinkle a little sugar on them and let the juice drain.
Put gelatin in a cup, along with 100 ml of cold water.
Mix the eggs with the sugar and put them in a double-bottomed bowl over low heat.
Stir continuously with a whisk until the sugar is diluted and the composition slightly thickened and frothy.
Turn off the heat and let it cool (maximum 5 minutes) while you mix the whipped cream with sour cream, vanilla and sugar, until it has a firm texture.
Take the gelatin and put it in the warm egg composition, stir to melt and mix.
Cool completely by placing the vessel in another in which you put cold water.
Incorporate the chilled cream, with a whisk, into the whipped cream. Chicken and strawberry pieces.
Prepare the tray in which you baked the top by lining it with food foil.
Pour half of the cream, place a slice on the counter, syrup with the pineapple compote, then pour the remaining cream.
Put the other slice on the counter, syrup, cover and put the tray with Diplomat cake cold for at least 3-4 hours (I left it overnight).
Turn over on the plate with a firm movement, peel off the foil and decorate after inspiration with whipped cream obtained by mixing the ingredients until it acquires a firm texture.
Whisk the egg whites with a pinch of salt. Add the sugar and mix until you get a dense and shiny foam. Rub the yolks with oil, vanilla essence and lemon over the egg whites and mix lightly. At the end, incorporate the flour mixed with baking powder, mixing lightly with a spatula, with movements from bottom to top.
Pour the composition into a tray (20/20 cm) lined with baking paper and put in the oven over medium heat (or 160 degrees electric oven with ventilation) for about 30 minutes, until the top is lightly browned and passes the toothpick test.
Remove the top on a grill and leave it to cool, along with the baking paper.
The gelatin is soaked in
50 ml of cold water. Cut the strawberries into cubes and put them in a sieve to drain the juice.
Rub the yolks with the sugar until they become like a cream. Add the milk little by little, mix well. Put the pot on low heat, boil until it starts to thicken, like a thinner cream, stirring constantly.
Allow to cool slightly, then add hydrated gelatin and mix. Leave to cool completely and when it starts to thicken, add whipped cream (cream for whipped cream mixed with 1 sachet of vanilla sugar). Let cool for a few minutes, to thicken a little. We also incorporate strawberries.
Diplomated Cake Assembly with Strawberries:
The cooled top is cut into 3 parts, the cream is divided into 2. We put one of the tops in the tray in which we baked the top, lined with food foil and we syrup it with a little milk sweetened to taste and flavored with vanilla. We put half of it diplomat cream, acover with the second countertop, also syruped with milk and repeat the operation. Cover the tray with foil and let it cool for a few hours, preferably overnight.
The next day Diplomat cake turn over on a plate and garnish with whipped cream and strawberries.

Pandispan with strawberries
As I told you yesterday when I wrote the recipe for strawberry jam, in addition to preserving them in this way in winter, I also used strawberries for a simple cake, ie a strawberry pandispan. So today I will add in the virtual cookbook this simple and quick recipe strawberry pandispan which in principle can be prepared using any kind of fruit, not just strawberries.
You can also make it with plums as in the yoghurt and plum cake recipe or even with blackberries as in the blackberry and yoghurt or cherry cake recipe as their season has started.
