Vanilla ice cream

I mixed the yolks together with the sugar until I got a cream.

I took the seeds out of the vanilla pod and put them in the milk. I lightly warmed the milk together with 200 ml of whipped cream, then they poured it over the egg cream.

I put the mixture in a saucepan on a steam bath until it started to thicken.

We should not leave too much, we do not want to overcook eggs.

I let the mixture cool very well, then I incorporated the remaining 200 ml of cream, which I mixed well.

I left it in the fridge to cool very well.

I divided the composition into the two containers of the ice cream machine (I left the containers in the freezer overnight) and I let the machine do its job for 1 hour.

Normally, the operation should take 20-30 minutes.

Like I said, I had to leave it in the freezer for a while before serving it.

  • For the first 2 hours, mix the ice cream every 20 minutes to avoid the formation of ice crystals, then leave it in the freezer until completely frozen.
  • Remove it from the freezer for about 20-25 minutes, before serving.

If you don't have a special appliance, put the cream in the freezer and remove it every 30 minutes and mix it, so as not to make needles, until we have ice cream of the desired consistency.
