Spaghetti is boiled in salted water according to the instructions on the package.
Heat the olive oil in a deep frying pan and add the finely diced onion and garlic. Then add the mushrooms. When they start to leave their juice, add the zucchini cut into thicker slices. It goes well with salt and pepper.
The bell pepper together with a peeled tomato is mixed in a blender until a paste is obtained. The other peeled tomato is cut into cubes. When the zucchini is penetrated al dente, add the cleaned shrimp, tomato and tomato paste with pepper to the pan and let it boil for a few minutes, while turning the shrimp on both sides. Sprinkle with dried basil and turn off the heat.
Drain the pasta and pour the vegetable and shrimp sauce over them. Stir lightly.
Place the spaghetti in a deep plate, put a few tablespoons of sauce, mushrooms and zucchini on top, then shrimp, grate Parmesan cheese on top and sprinkle with fresh basil leaves.
A real delight, along with a white wine!
